5 Negroni Variations: White, Sbagliato, Mezcal and More
A Negroni changes character when you swap just one of its building blocks. These five variations cover a pale aperitif, sparkling wine, mezcal, spiced gin and bourbon. Each recipe below makes one drink; 3 cl equals 30 ml.

Start with the classic Negroni
The reference point is 3 cl gin, 3 cl Campari and 3 cl sweet red vermouth, stirred over ice and finished with orange. Our classic Negroni guide explains the method.
1. White Negroni
- 3 cl gin
- 3 cl Suze
- 3 cl Cocchi Americano
Our version uses Cocchi Americano with Suze in place of the red ingredients. Stir over ice and garnish with orange. Expect a different herbal bitterness.
2. Negroni Sbagliato
- 3 cl Campari
- 3 cl sweet red vermouth
- 6 cl chilled Prosecco or dry sparkling wine
Stir Campari and vermouth over ice, add the wine last and stir gently. Garnish with orange. This is our 1:1:2 version; see the Sbagliato recipe and ratio guide for the equal-parts alternative.
3. Mezcal Negroni
- 3 cl mezcal
- 3 cl Campari
- 3 cl sweet red vermouth
Replace gin with mezcal, stir over ice and finish with orange. The result depends on the mezcal: smoky and earthy notes can change the familiar bitter-sweet balance.
4. Spiced Negroni
- 3 cl spiced gin
- 3 cl Campari
- 3 cl sweet red vermouth
Stir over ice and garnish with orange. Prepare and strain the gin first using our Christmas Negroni infusion recipe, which combines cinnamon, cloves, cardamom and citrus.
5. Boulevardier
- 3 cl bourbon
- 3 cl Campari
- 3 cl sweet red vermouth
This is our equal-parts variation: stir over ice and add orange. For comparison, the IBA Boulevardier uses 4.5 cl whiskey with 3 cl each Campari and vermouth.
Which variation should you choose?
Choose Sbagliato for bubbles, White Negroni for a different herbal profile, mezcal for an agave-led version, spiced gin for winter aromas or Boulevardier for whiskey. Change one recipe at a time to discover your preference.
